A vinegar shot before dinner is one of the oldest blood-sugar tricks

Biochemist Jessie Inchauspé found herself chasing this question with a glucose monitor stuck to her arm. The answer involves fermentation chemistry and a very old culinary habit.

Acetic acid, the compound that gives vinegar its sharpness, slows the action of an enzyme called alpha-amylase, which the body uses to break starch into glucose. Slower breakdown means glucose enters the bloodstream more gradually, and the resulting blood-sugar rise is flatter than it would be without the pre-meal drink.

Jessie Inchauspé, a French biochemist who spent months wearing a continuous glucose monitor while testing meals, highlighted this effect in her work on blood-sugar management. Studies in people with type 2 diabetes had already documented the mechanism; the more contested question is how large the benefit is in healthy people without impaired glucose tolerance.

Small-scale trials suggest a tablespoon or two of apple cider vinegar diluted in water before a starchy meal can shorten the glucose spike — but the effect varies considerably from person to person, and the strongest evidence comes from participants who already had blood-sugar dysregulation to begin with.

The broader point is structural: what you eat with starch matters as much as what the starch is. Acid, fat, protein, and fiber all slow gastric emptying and the rate of glucose entry. Vinegar is just the most concentrated and ancient version of that principle, one that cooks discovered long before anyone knew what glucose was.
