The French paradox was mostly a paperwork problem
Cheese, butter, and red wine explaining France's low heart-disease rate made a great headline. The data measured something else.
In 1991, a French researcher named Serge Renaud presented findings on national television that quickly became one of nutrition science's most beloved stories: the French ate rich in saturated fat — cheese, butter, pâté — yet had lower rates of coronary heart disease than countries eating far less of it. Red wine, drunk daily and in moderation, was floated as the protective ingredient. The phrase French paradox stuck, and it helped kick off a global fascination with resveratrol and heart-healthy wine that lasted decades.
The paradox mostly wasn't one. In 1999, epidemiologists Malcolm Law and Nicholas Wald published an analysis in the BMJ pointing to two much duller explanations. French doctors were, at the time, less likely to record a death as caused by coronary heart disease on a certificate than doctors in Britain or the US were — a difference in paperwork, not physiology, that alone accounted for a real chunk of the gap. The rest came down to timing: heart disease deaths lag behind decades of dietary fat and cholesterol exposure, so a country whose fat intake had only recently caught up to its neighbors' would show today's low mortality rates from yesterday's leaner diet, with the bill still to come.
None of that makes for as good a toast. But it's a cleaner example of how a genuinely strange number, once you check the measurement instead of the story, usually explains itself without needing wine to be magic.
